Strawberry pecan summer salad

A strawberry pecan salad is the perfect way to welcome the summertime. With strawberries, goat cheese, crunchy pecans and fresh lettuce, you can't go wrong.

I love it when summer gets here! First, it’s a signal that the year is nearly halfway over (what??!).

It’s also when some of my favorite produce like berries and greens are a little more affordable per pound.

More than any time of the year, I find myself eating more greens and fruit in the summertime. These items are just better when they’re in season.

One of my favorite salads includes some of the summer’s best ingredients – strawberries, goat cheese, pecans, chicken and spring greens.

Somehow, I always have each of these ingredients in my pantry all summer long, and this salad is so easy to whip up it’s constantly a go-to.

How to make this strawberry pecan summer salad

Start by giving all of your produce a rinse. Make sure to clean everything thoroughly and pat it dry.

I also like to use a salad spinner for this step. It helps to dry the leaves and also gets rid of any excess dirt. It’s always surreal to see how much dirty water is left even after a good rinse.

After you rinse all of your produce, you can chop your strawberries, pecans, and chicken, and throw them into the salad. You can also add your goat cheese at this point.

Next, dress the salad – I love this with a green goddess dressing. I’m also a huge fan of any and all avocado dressings. It is totally up to you.

Then, toss the salad, and it’s ready to serve.

A summer salad with easy to find ingredients and delicious flavors. 


Ingredients

  • 4 cups spring salad mix (or really any salad mix)
  • 2 ounces crumbled goat cheese
  • 5 strawberries, sliced
  • 6 ounces of grilled chicken, shredded
  • 1/4 cup of pecans chopped
  • Dressing of your choice (green goddess or avocado are my favorites)

Instructions
