Low carb Hearts of Palm Pasta Alla Vodka

Simple and quick vegetarian low carb pasta dish.

There are a lot of foods I’ve missed since adopting a lower carb diet.

Although I do occasionally eat pasta when the time is right I love finding low carb swaps for pasta and grains.

What are Hearts of Palm pasta?

Hearts of palm is a veggie that’s taken from the core of a palm tree. In it’s raw form, it looks like a cylinder of cheese, but for pasta, Hearts of Palm are made into different shapes to be used as pasta.

You’ll typically see them in a skinny shape like linguini.

It’s only one ingredient, and relatively inexpensive to purchase. They’re also easy to cook and nutritious.

What do Hearts of Palm taste like?

Hearts of Palm is a great blank slate as a pasta alternative. It has some nutty tones, and depending on the brand you buy it may have a bit of a salty flavor.

I like to rinse them before use just to get off any residual flavor additives.

How to cook Hearts of Palm

These don’t need very long to cook at all. They take anywhere from 3-5 minutes to heat through.

When I make them as a pasta dish, I typically make my sauce first, and then add in my hearts of palm at the end to finish the dish.

What’s the nutritional value for Hearts of Palm like?

A serving of hearts of palm is only around 4 grams of carbohydrates and 20 total calories.

It’s also vegan, gluten free, no sugar, and kosher. It’s a great option for a variety of diets.

Should I use it from a can or in a pouch?

I prefer most things out of a pouch if I’m going to use pre-made ingredients.

Cans are generally cheaper, but the products are mushy, always have extra sodium for preservation, and have a tinny taste to them.

I get the one in the pouch. Plus, it comes in 3 servings, which makes measuring easy when I’m making dinner for Bryan and I.

Simple and quick vegetarian low carb pasta dish. 


Ingredients

  • 12 ounces Hearts of Palm Pasta
  • 2 cups Vodka Sauce
  • 1 cup Grape Tomatoes
  • 1 cup diced eggplant
  • 1 cup diced zucchini
  • Grated Parmigiano Reggiano (to your liking)
  • Chopped Basil (garnish)
  • Salt and pepper

Instructions

  1. On low heat, warm your tomato sauce. 
  2. Add grape tomatoes
  3. Add diced zucchini and eggplant and cook until fork tender (about 5 minutes). 
  4. Add Hearts of Palm Pasta and cook for 3 minutes, until pasta is heated through
  5. Sprinkle on Parmisano Reggiano
  6. Sprinkle on basil for garnish

  • Hearts of palm pasta cooks quickly, it only needs to be in the sauce for 3-5 minutes to heat through. Overcooking may result in mushy noodles. 
  • This stores in the fridge in an airtight container for 1 week.
