Strawberry Goat Cheese and Mint Kale Salad

A simple salad with lots of great spring and summer flavors. Sweet, sour, tangy, and hearty all at once.

I really love switching up my recipes as the seasons change.

 I tried to use as many fresh ingredients as I can while they’re at the most affordable price.

My strawberry goat cheese and mint kale salad it’s one of those recipes born out of using fresh ingredients.

Ingredients for strawberry goat cheese and mint kale salad:

  • 4 cups of chopped kale
  • 1 quarter cup of mint leaves finely chopped
  • six strawberries, diced
  • 1/2 cup of goat cheese
  •  juice of one lime
  • ¼ cup vinaigrette dressing of your choice (I used fig balsamic and it was SO good).

This recipe is relatively easy. Chop your kale, mint and strawberries and add them to a bowl. 

Massage the kale with lime juice and dress then crumble the goat cheese over the top. 

Dress with the dressing of your choice.

No need for a dissertation on this one!

This salad makes two servings. The recipe is easily scalable and comes out the same way even in larger quantities.

It keeps for one day so make sure you eat it within a day of making it. Or else you might notice that your kale leaves and strawberries have gotten soggy. It’s ok to make it the night before for lunch or dinner the next day.

I served mine with a pre-marinated chicken on the side. It was a delicious meal altogether.
