I know we sometimes like to find ways to replace rice in a diabetic diet, but with the right portion sizes and mindful moderation, rice can be a good fit.

I really love this coconut milk rice recipe because it takes regular white rice and makes it rich and creamy with just the addition of coconut milk.

With three ingredients, you’ll have some of the best coconut rice out there.

Why make rice with coconut milk?

Coconut milk makes this rice rich and delicious with the simple addition.

While rice can be starchy and sticky, coconut rice is fluffy and has a nice richness and creamy texture.

Additionally, for people with diabetes, the addition of fatty coconut milk can change the glycemic index of the rice just slightly, helping with slower digestion.

Is coconut milk rice healthier for people with diabetes?

At the end of the day, rice is rice. Rice will have an impact on your blood sugar by spiking it.

Adding coconut milk doesn’t mean you can over-indulge. You should still be mindful of your portion sizes when including rice in a meal.

How to make coconut milk rice

Coconut rice is made just like any other rice.

First, rinse 1 cup of rice in a sieve or strainer until the water runs clear.

Then pour your washed rice into your sauce pan, and top with 12 oz coconut milk, ½ cup water and a pinch of salt.

Make sure to break up any lumps in the coconut milk before heating.

Then, cook the rice on high heat until the mixture starts to boil.

Once it comes to a rolling boil, turn the heat down to low, and cover, while leaving a little opening on the top of the pan (so it doesn’t boil over).

Cook on low heat for 15 minutes, until rice is tender and completely steamed.

Fluff it and enjoy.

What kind of rice to use for this dish?

I tend to go for jasmine rice. It’s long-grain and cooks fluffier than other types of rice.

    1. I usually do my rice on the stove, but I believe the ratios for the rice cooker are 1:1 with 1 cup of liquid to 1 cup of rice.
