Thanksgiving Meal For Two

It's totally possible to have a beautiful Thanksgiving spread for a small family! Check out how I did it!

Thanksgiving is going to be a little different for Bry and I this year!

Instead of a big spread with our huge families, we’re taking it easy and keeping it simple.

With Bryan’s leg injury, and limited mobility, it’s a little easier for us to stay in and have thanksgiving meal for two – especially while Houston seems to be facing crazy weather this year.

I wanted us to still be able to have a special turkey day (especially since this is Bryan’s favorite time of year).

So with the help of Whole Foods Market 365, I created a scaled down version of our regular Thanksgiving, and made it Thanksgiving for two!

I love this minimized Thanksgiving because all of the ingredients are fresh, and delicious and I was able to make the full dinner in an hour – not even kidding!

First I had to shop for all of my ingredients, and I love Whole Foods Market 365 because the stores are packed with affordable foods with great quality.

A new store just opened in the Independence Heights Neighborhood in Houston, and it’s one place I love to do my shopping.

Searching for ingredients for Thanksgiving was a really fun process because I had my list, and I was able to get in and out quickly!

I also had no trouble finding someone to ask for help when I needed it, and the shopping experience was smooth and seamless.

The Appetizers.

You have to graze before you have that Turkey, right?

One of the things that I loved picking up was the Emmi Roth pre-made cheese boards.

They come with three, really delicious cheeses on a wooden board, and cute little labels for your cheese, so you can drop it on your buffet table, and snack on it while the meal gets prepared.

Mine came with Van Gogh Gouda, Grand Cru Reserve and Jalapeno Havarti.

These are three great cheeses that pair really well with wine, and surprisingly, turkey!

Additionally, if you’re like me, and always stress out about what to bring for Friendsgiving, you can just run in, grab a couple of these boards, and head to the party with no fuss!

The Turkey

The turkey is obviously the centerpiece of any Thanksgiving table. Whole Foods Market 365 has a great selection of organic and conventional Turkeys!

Because it would be just the two of us, I opted for a three and a half pound turkey breast. I

loved this option because it’s easy to slice up and save for later and to put in other dishes.

Plus, it’s a nice size so the cooking time isn’t as long as a full turkey. Make sure you check out the recipe below!

The Cranberry Sauce: This is one of my favorite ways to dress the turkey!

There’s nothing wrong with canned sauce, but I like to make mine from scratch with fresh lemon, lemon juice lemon peel, sugar and cranberries.

I also like mine more pureed, instead of chunky. It takes around 10 minutes for it to all come together!

The Sides

I like my sides to be a little diverse.

Typically you’ll find sweet potatoes, or roasted brussels sprouts on my table.

This year I also included some fall fruits!

I love Honeycrisp Apples and Pears, both to decorate the table, and to eat with our meal.

You can’t go wrong with fresh fruit!

My other favorite side this year was air fried brussels sprouts.

They use so much less oil than regularly roasted ones, and they have a nice crispy texture with a solid smokey flavor!

Dessert

Dessert is always everyone’s favorite part of the meal and Whole Foods Market 365 delivers there too!

It’s tough to make the choice between Achatz apple, cherry, pumpkin, pecan and vegan Pumpkin, but our little table got set with pecan and cherry!

I pop mine in a low temp oven while I get the table set, and by the time we’re all settled everything has come together and smells divine.

Thanksgiving is one of the best times of year to be with your family, enjoy the fall, and eat good food.

I’m glad that I was able to find the ingredients at my local Whole Foods Market 365 to create a high-quality, affordable and delicious Thanksgiving meal for two that we’ll remember for years to come.

Description

A spicy and flavorful dish that will be a favorite on your thanksgiving dinner table. Note that this will feed six, so if you’re having a Thanksgiving for two, you’ve got some good leftovers to work with!

Instructions

  1. Preheat your oven to 425 degrees
  2. Line a baking sheet with foil
  3. In a bowl, mix together all of your spices and set aside.
  4. Place the turkey breast on your baking sheet and coat with olive oil
  5. Then, generously coat your turkey breast in the spices.
  6. Place in the oven for 20 minutes on high, then reduce the temperature to 350 degrees F for 40 minutes, or until a meat thermometer placed in the center reads 165 degrees.
  7. Take out of the oven and let the meat rest for 15 minutes.
  8. Slice open for great tasting, and moist turkey.
  9. Dress with whatever you’d like and enjoy.
  10. To store – be sure to slice the turkey, wrap it in parchment paper and keep it in an airtight container. It will freeze for a month, and keep for 5 days in the refrigerator.

  1. I love that you two are able to still have a great Thanksgiving even if Bryan is able to move around much right now. I think this is a great option for it to be about you both and the pups and you can always go back to the big fam next year. Plus Whole Foods 365 made your big day look awesome. I mean that pie thoooooo!!!
